CANDIED SWEET POTATOES
4 to 5 servings
- 2 pounds yam-type sweet potatoes
- 2/3 cup brown sugar
- 5 tablespoons butter
- 2 tablespoons orange juice
- 4 teaspoons strained fresh lemon juice
- ¼ teaspoon nutmeg (preferably freshly grated)
- ¼ teaspoon salt
Peel sweet potatoes deeply, exposing the dark orange flesh of the interior, into halves or thirds.
Place in a pot, cover with water, and boil slowly for 25 minutes, or until tender when pierced with a fork but still firm hold their shape. Drain in a colander.
Combine all remaining ingredients in a 10-inch skillet made of or lined with a noncorroding material.
Bring to a simmer and cook for 1 minute, stirring constantly. Add cooked sweet potatoes and gently turn in the glaze mixture to coat on all sides.
Reduce heat to very low, cover skillet, and simmer for about 30 minutes, turning sweet potatoes every 6 to 7 minutes. They are done when most of the sugar glaze has been absorbed.
AHEAD OF TIME: Sweet potatoes may be prepared several days ahead and stored in a covered container in the refrigerator. To reheat, place in a skillet with several tablespoons of water and warm over very gentle flame, turning frequently.

You’re more than welcome, Eric. My dinner is on Christmas Day. This year, I’m making a smaller turkey with some stuffing and mashed potatoes. I’m into the lights, the tree, and the most old-school music. And great wine. I always have a great Christmas, because no matter who is around, I’m always with the one I love most: MYSELF!
